Christmas Yummies

I had an unexpected day off today because of the freezing rain we had last night so I decided to be productive. I really haven't gotten into the cookie baking this year. Too busy I guess. But I kept running into this recipe over the Internet the last couple of weeks and decided since I didn't want to clean the house I would at least get some baking done for next week.

I saw this recipe on the pioneerwoman.com a couple of months ago and saw it again on bakerella.com last week. Everyone loves the Oreo truffles I make every year so I decided to change things up this year and surprise everyone. I used red velvet and German chocolate cake mix but I'm guessing any kind of cake mix will work.

Red Velvet and German Chocolate Truffles
1 box cake mix
1/2 container cream cheese frosting for the Red Velvet Truffles
1/2 container pecan coconut frosting for the German Chocolate Truffles
Chocolate Bark Coating
Bake cake according to directions on box. Cool completely. Crumble baked cake in large bowl.














Add frosting and mix together until you can form moist balls (get your mind out of the gutter!)






It looks gross I know! I had to keep washing my hands because the mixture is extremely sticky and the balls wouldn't roll very well.

The two batches I made came out to 102 truffles.




Freeze for at least 2 or 3 hours. Melt 3 or 4 blocks of bark coating at a time( I do mine in small batches) in a plastic bowl in the microwave until smooth. Dip balls in chocolate. Decorate as desired.















Here's my new toy. We've been saving since June for this. Well actually since we bought the house but other things came up and we had to spend the money on those. But we finally got it and I'm excited!

I keep seeing this recipe, too, and can't wait to try it! Yours look great! I especially love the white ones drizzled with chocolate. So pretty!
