Since I live 2 hours from my immediate family and J lives a hour away from his, it's kind of difficult to cram Thanksgiving into one day. So we are having dinner with J's family tomorrow and will travel to my parents on Thanksgiving Day. Thanksgiving is my favorite holiday because it's all about the eating and not worrying about buying presents, wrapping and trying to outdo each other gift wise (since my sister doesn't read this I can go ahead and say it). My mom does the turkey (since I taught her it's OK not to cook a turkey for 8 hours) and everyone else brings whatever. I have been making this sweet potato dish for years and when I married J I started to make it for his family too. I get threatened every year that if I don't make it I'm not allowed to come, it's that good. I make extra because J's mom doesn't get good food in the nursing home and she always, always wants to take some back with her.
This is about the only time of the year I get out my heavy duty mixer
Sweet Potato Casserole
2-40 oz cans of sweet potatoes, drained
1/2 pint heavy whipping cream
1 cup light brown sugar packed
1 tablespoon cinnamon
1 tablespoon nutmeg
1/2 cup pecan chips
1 tablespoon sugar
Preheat oven to 350 degrees
Whip heavy cream at medium speed until creamy but not heavily whipped. While that is going on, mash drained sweet potatoes with potato masher or fork until creamy. Add sweet potatoes to whipped cream at slow/medium speed until completely combined. Mix in brown sugar, cinnamon, and nutmeg with spoon. Spray 9X13 baking pan with nonstick cooking spray and pour mixture into pan. Bake covered with foil for 45 minutes. Meanwhile coat pecans with sugar. Uncover potatoes and sprinkle pecans and sugar on top and bake additional 15 minutes.

This weekend is a busy one. We also have a housewarming party to go to before we head for J's family Thanksgiving. I also have to make apple dumplings for this thing. I think we are taking Sunday off and maybe going to see the new James Bond movie "Quantum of Solace".
